Electronic Educational Advisory Committee (EEAC)

The Academy promotes learning through a three-step process.

The first step is comprehensive instruction to understand the "why" or theory. Why does wine in a marinade tenderize meat, or why does ice water make flakier pastries? Understanding why you perform a process allows you to be more experimental and creative.

The second phase is demonstration and application. Watch a certified chef draw on his years of experience to show you exactly how to perform a process. Then practice in small groups with the chef's guidance.

The third phase is proficiency, often called mastery. It is not good enough to know how to create a rich creamy hollandaise sauce from scratch. You must be able to do it well every time. Our chef instructors will give you the time, attention and direction to perfect your technical skills.

The following areas are emphasized:

  • Cooking Skills and Food Knowledge

  • Human Resource Management (including leadership and communication skills)

  • Cost Controls, Business Mathematics, and Computer Applications in the food and hospitality industry

IUP's curriculum is intensive, rigorous and thorough. The Academy program will provide you with the skills, knowledge and work ethic necessary for a lifetime of achievement.
