Culinary Arts

IUP offers multiple options for culinary arts majors

The first component of all IUP culinary arts options is the accelerated, 16-month (4-semester) Culinary Arts curriculum.  This program is nationally recognized and accredited by the American Culinary Federation.

Students are on the culinary campus for 3 semesters:  Fall, Spring & Summer.  The final semester is a paid externship in the industry.

After completion of the externship semester, the student chooses from these options:

  • Culinary Arts can be completed as a stand alone program that earns the student a certificate in culinary arts. Many students choose to accept permanent positions at their externship sites.
  • Culinary Arts can be continued into IUP's Hospitality Management or Food and Nutrition BS degree programs if the student has a C average or better.  Students are completing the combined program in an average of 4 to 4 years. The BS degree options are completed on IUP's main campus in Indiana, PA. The student will earn a Bachelor of Science degree and a certificate in Culinary Arts.
  • Culinary Arts can be combined with Baking & Pastry Arts for advanced training, if the student meets admission requirements. The student will earn a Certificate in Culinary Arts and Baking & Pastry Arts.
  • Culinary Arts can be combined with International Study Tours for continuing culinary education. The student will earn a Certificate in Culinary Arts. (European diplomas may also be earned depending on the program selected.)

What You値l Learn

At the Academy, you will learn culinary techniques such as masterful knife skills and how to create artistic plate presentations. You will discover how to fashion stunning showpieces and how to garnish grand buffets. You値l learn classical cookery and international cuisines. 

At the same time, you will be honing your business skills. You値l learn how to develop a unique menu and design the kitchen to produce it. You値l study management and motivation of employees, leadership and communication skills, purchasing and cost controls, and computer applications in food service. 

You値l also learn to apply your skills. First, you値l help operate the Academy restaurant, serving a menu of gourmet American cuisine to the public. Finally, your last semester will be a four-month paid externship during which you will work with a company's chef to refine your culinary skills and learn new techniques. This experience not only completes your education; it may well develop into a permanent position or a valuable reference for future employment.

Degree vs. Certificate

It is helpful to understand that all culinary graduates begin their careers as entry level cooks, regardless of the program from which they graduate. IUP has chosen to offer the core culinary arts curriculum as a certificate in order to allow our students to get out in the industry quicker with more hours of food-related instruction than an associate degree program would allow.

IUP students are successfully competing with graduates from all the top US culinary schools. They are being placed in the top 4 and 5 diamond properties and they are being promoted to supervisory roles rapidly. Many graduates have extremely successful careers in culinary arts with no additional education.

Some students come to IUP knowing that a BS degree is their goal and they return immediately after the externship to continue their education in the degree program. These IUP Culinary Arts graduates are typically at the top of the class in Hospitality Management.  They are also so well disciplined from the culinary curriculum, that they are easily finishing both programs in under 4 years.

Other students prefer to get some industry experience and then return to pick up the courses to earn their degree. Students completing our culinary arts program, have up to ten years to transfer their culinary hours into BS degree programs at IUP
