Baking & Pastry Arts*

IUP's Baking & Pastry Arts Program
Now in it's third year!


This program is providing some of the most advanced pastry training available in the US.  Class sizes limited to 15 students allow personal instruction by a veteran ACF certified executive pastry chef and culinary educator who has worked all over the world and is a gold medal winner in multiple ACF sanctioned competitions.

*Prerequisite:  successful completion of Culinary Arts at IUP or another
ACF accredited Baking & Pastry Program

 

Course Descriptions


What You’ll Learn

Each semester consists of 5 three week courses, for a total of ten courses.  Subjects will include an expanded curriculum in: quick breads, laminated dough, basic and artisanal breads, pies, tarts, pastries, cookies, petit four, cakes, advanced cake decorating and wedding cakes, custards and mousse, plated desserts, chocolate and candies, ice cream and sorbet, pastillage, chocolate and sugar showpieces.

 We will also review and perform baking conversions, percentages, formula costing and formula balancing on a daily basis and keep a journal of all of our formulas, notes and work.

Who is Eligible to Apply?

Graduates of the core program (or current students who have completed all classroom coursework) with a cumulative GPA of 3.0 or better in the 3 baking classes, and a 2.75 or better overall GPA.

This is an advanced course of study with a large workload moving at a rapid pace requiring students with strong academic skills and study habits.

 Graduates of other ACF accredited programs must have a cumulative GPA of 2.75 or better and a combined average of 3.0 or better in all baking courses. 

Graduates from other programs will also be required to pass written and practical baking exams to evaluate their skill level.  All candidates may be further evaluated with additional testing, written goal statements, letters of reference or any combination of the above.
